It is known that coffee particles are electrified when ground, which leads to the fact that they react less well with boiling water. In this case, coffee particles form microscopic lumps that do not allow water to pass through. For this reason, the drink has much less taste and aroma.

According to scientists, to preserve the taste of coffee beans, water should be added to the beans before they are ground.

“Adding a very small amount of water eliminates the electrostatic charge and prevents the formation of lumps. This results in less waste and improved extraction from coffee during brewing. When grinding coffee at home, I would recommend starting by adding just one drop of water, gradually increasing its amount, and determining the optimal dose — this process has many nuances,” explained Christopher Hendon, Associate Professor of Computational Materials Chemistry at the University of Oregon.

Researchers say that this method is especially effective when making espresso or filtered coffee. It is not suitable for making a drink in Turku.
