New Year’s cake: how to make it at home.



New Year’s Dragon Cake

Ingredients

For the biscuit

Dark chocolate — 200 g

Butter — 400 g

Sugar — 300 g

Vanilla sugar – 4 packs

Eggs — 8

Wheat flour — 560 g.

Baking powder – 4 tsp

Milk — 16 tbsp

For cream

Butter — 600 g

Condensed milk — 300 g

Candy (caramel) — 200 g

Cream — 300 g

Cognac — 1 tbsp

For decoration

Dark chocolate — 300 g

Food coloring — 2 g

Marshmallow — 2 pieces

Cooking

Divide everything you need for the biscuit into two identical parts: you need to bake two round biscuits.

Knead the dough. Beat the butter with plain sugar and vanilla sugar until the sugar is completely dissolved. Then add eggs, flour and baking powder one by one and pour in milk. Add all the ingredients without stopping whipping. Continue to whisk until fluffy, smooth for 5-10 minutes.

Add the crushed chocolate and knead the dough well with the chocolate with a spatula.

Transfer the dough to a parchment-covered form.

Bake the biscuit until cooked in an oven preheated to 170 °C. Prepare the second biscuit. Ready-made biscuits must be cooled to room temperature.

Whisk the cream. Melt caramel candies (toffee or “Cow”) in a small amount of water (you can use a microwave oven), mix with condensed milk and gradually add to butter. When the cream is whipped, add the brandy and whisk for another 1-2 minutes.

Cut the cakes as shown in the ninth minute of the video. Coat the halves with cream and collect the dragon’s body, repeating the steps for the author of the video.

Coat the finished figure on all sides with cream. Let the cream soak and harden slightly in a cool place.

On parchment, make elements of a dragon’s crest out of melted chocolate. Draw with serpentine movements, layer by layer, figures, as in the video. Let the chocolate freeze in the fridge.

Then, on the flat side of half the horn of the comb, also apply melted chocolate and let it freeze in the refrigerator. Meanwhile, mix the cream in two colors to decorate.

Using the “grass” nozzle, apply the cream to the dragon scales. The base has one color at the bottom, another at the top. Make eyes out of marshmallow and chocolate, nostrils out of chocolate. The cake is ready.

Christmas cake “Christmas tree”

Important: for such a cake, you should make sure you have a suitable silicone mold in advance.

Ingredients

Eggs — 2 pieces.

Sugar — 1 cup (+ 1 cup for cream)

Salt — 1 pinch

Sour cream —100 g

Flour —2 cups

Baking powder —1/2 tsp

Sour cream —200 g

Cottage cheese —100 g

Milk chocolate -1 piece

Sweets for decoration

Cooking

Beat eggs in a cup, add sugar and salt.

To the resulting homogeneous mass, add sour cream, then flour sifted with baking powder. Mix the smooth, thick dough thoroughly.

Pour the dough into a silicone “Christmas tree” form (one cake takes exactly half of the dough).

Bake the cakes in the oven until golden brown at 180 °C. Remember to check that they are ready with a toothpick.

Melt a small amount of chocolate and cover the cake leg with it.

For the cream, mix sugar, sour cream and cottage cheese. Thoroughly beat the mass until smooth and evenly coat the Christmas tree cake with cream.

To decorate the “Christmas tree”, use small sweets, dried fruits, sweet powder. Before serving, put the cake in the refrigerator for 1-2 hours to soak.

New Year’s cake “Snow Hill”

Maximum fat sour cream — 500 g

Condensed milk — 1 can

Vanillin

Cooking

Break the eggs into a container, add sugar and mix with a mixer until fluffy.

Add baking powder and the zest of half a lemon, mix.

In another container, combine flour and chilled butter (or margarine), cut into cubes. Rub into crumbs with your hands.

Mix the egg mixture and flour mixture into an elastic dough. Refrigerate for 20 minutes.

Pinch off a walnut-sized piece from the dough. Flatten it with your fingers and place hazelnuts in the middle. Then roll up the ball, put it on parchment.

Bake for 15-20 minutes at 180 °C.

To prepare the cream, whisk the sour cream with condensed milk and a pinch of vanillin. Then send the mass to the refrigerator.

Dip the cooled cookies in sour cream for 20 minutes to soak them, and place them on a platter in a pyramid.

Pour the remaining cream over the cake and then sprinkle with coconut flakes. Let it soak for several hours, or better yet, all night.
